The Chef

What has been your journey in cuisine ?
It started when I was 11 years old, next to my grandmother. Then I grew up, I graduated at the culinary university Ferrandi in Paris. During this course, I had the opportunity to work in different restaurants : L'Assiette Champenoise***, Le Sergent Recruteur*, the Presidency of the french Senate ... Then I went to Stockholm, to discover something new. I worked at restaurant AIRA** where we got the second star !
Where does this passion for cooking comes from ?
It comes from those convivial moments spent at the table, wether it was in a fancy restaurant, or in the countryside with my family, all reunited around my granny's dishes ... I've always loved food, both refined and simple, cooking has quickly shown to be an evidence for me.
What do you like most about cooking for other people ?
I think that it's not so much the food in itself, but actually the moment that results from it. What I like is to create meals that will become memories to my guests. It's to set up like a meeting between the client, the chef and the suppliers. This moment of sharing is what drives me the most, it's another way of traveling, without having to go far away.
